DH's birthday and I should have done better, but we had leftover pulled chicken in hatch sauce over rice with a side of hatch cornbread. A special dinner will have to be another night because it is not tonight.

My husband's birthday today as well - he wanted Banquet fried chicken - Banquet fried chicken is what he got. He didn't want corn - he didn't want cornbread, he didn't want any kind of potatoes or gravy or anything, just chicken - he says he's saving room for the cake (Triple Chocolate Fudge). My dinner was the leftover chipped beef on toast that I made last night, I'm going to eat some fruit shortly, and then I'll pig out on cake later. I also had some chicken skin after it was out of the oven so I consider that my nod to nutrition for today. The rest of the stuff was just - well - stuff.
For his birthday, we'll actually have something great over the weekend - it's too hot and humid today to do much else, and it will get worse all week - neither of us wants anything heavy. Well, except for cake.
Gonna have a really good steak dinner at home tonight with steaks Ribeyes and Prime Sirloin) from a great local Meat Market. Portobello mushrooms and asparagus. Got 2 new Lodge fry pans too.
I made a nice large dinner salad..
Spinach, avocado, cucumber, tomato, green pepper, Jicama, a hard boiled egg and a half of a roasted chicken breast sliced thinly.. It was very yummy.
