Tonight I bought some cherrystone clams and made clam chowder from the NY Times Cooking site. Oh man, it was divine. It is a bit of work, but worth it.
We had it with cheese and crackers. What a simple and yummy dinner!
Lived on Cape Cod MA for years and digging all kinds of shellfish I know a few things about clams and cherrystones are divine. A hard shell but in the end no matter how made are worth it. Good for u.
Fucilli pasta (long and curly) tossed with home made basil walnut pesto. Garlic bread. And, sliced garden tomatoes with fresh basil, drizzled with olive oil.
A glass of white wine. It will be a surprise.
Mixed berries with a dollop of whipped cream.
love basil walnut pesto: I made it in the fall and freeze it in little cups. Then just take it out of freezer and use whenever we want a different pasta type dish.
I made 2 tomato/onion pies yesterday. One of them we are having tonight with a salad. The other I am taking to a friend who is getting back from a short vacation today. I always leave she and hubby dinner in the fridge when they are out of town, so she doesn't have to worry about cooking the minute they get home. We take care of her kitties while they are gone, so have access to the house. I also made cold slaw to go with the pie,, but we had some last night.
Tonight a big pot of green lentil soup ( moong daal),chapatis,lime pickle,onion,tomato and cucumber slices,homemade yogurt with mint leaves,lassi. For dessert still red cherries.
