Last night, we went with a light supper of cod and steamed broccoli and lemon butter. I'm on my own tonight and haven't a clue if I'll grab something on the way home or scavenge the fridge.

Tonight chicken noodle soup with vegetables. For dessert 1/2 a pink grapefruit.

Tonight we'll have oven panko baked lemon mahi mahi with baby boy choy and risotto. We are trying to eat fish at least once a week. He doesn't love fish, but he does like this recipe. It is lighter than fried fish and it is good with these sides.

am just about ready to make a big batch of spaghetti and meat balls with some hot Italian sausage as well. Usually cook it all day but today it will cook for only about 5 hours. I have just been playing around and wasting time this morning.

Tonight will have to be a sandwich dinner: chicken bacon clubs, coleslaw, shoestring fries and iced raspberry almond bars for dessert.

I'm thinking Caprese Pita sandwiches and a Big Salad. Chocolate and fruit for dessert.

Spring is here with a vengeance, I can't believe I have big beautiful basil plants already (I bought transplants ). Got to enjoy this beautiful weather before the relentless summer heat arrives.
