Okra stir fry with onions and jalapeños.
Fried chicken thighs with a garlic powder/black pepper and paprika rub.
Roasted jalapeños stuffed with goat cheese.
Simple salad with cherry tomatoes.
Watermelon for dessert.

Been getting too much take out delivered in recent weeks, a real hazard of living in NYC.
Marinated a bunch of chicken thighs with olive oil, tarragon & salt/pepper overnight, put them on a baking sheet with lots of onion slices around them with oil, s&p, & a bit of thyme sprinkled all over @ 425F for about 30 minutes. Served with farro that I cooked with butter, s&p & thin diced carrots.
Will probably be going to two backyard barbecues (at least one for sure) this weekend with plenty of meat, so I had a veggie delite sandwich on wheat bread from Subway, sun chips and watermelon slices. Drank a Sprite.
Very good Appalachian style, updated food. I had the Trout and Grits, and we shared a really delicious macaroni and cheese and a salad. If you are ever in Charleston WV, we recommend this place for good, locally sourced comfort foods, that also manage to be innovative.
Came home last night and made a freezer dive for pork, leek & black mushroom dumplings, served over green beans with ponzu to drizzle over all. Bananas & chocolate sauce for dessert.
Tonight will be sockeye salmon, corn on the cob, okra & tomatoes. White peaches with cream for dessert.
