I saw a recipe online for a "french onion grilled cheese" made with gruyere and onions caramelized in broth / wine the other day. It sounds so good that I haven't been able to stop thinking about it, so will make that tonight.

I'm sorting out the freezer and came across a package of chicken breasts which are more than ready to be fixed. I was remembering a recipe that my dad used to make so I tried to find it online and had success.

You dip them in beaten egg and then roll in Ritz cracker crumbs, garlic salt and pepper and lay them in a 9X13" which has melted butter in it and bake until cooked through. These come out so buttery and crispy.

Might as well pull out all the stops and make a twice-baked potato casserole to go along and some broccoli.
