Anyway, I cooked one of the ribeye steaks that I bought on sale a couple of days ago at Hannaford ($5.99/lb.!). Just did it on the stovetop with very simple seasonings -- rosemary, garlic, thyme ...
Took all of 10 minutes to cook (actually, a few seconds over 9 minutes as I was afraid of overcooking it) ... then I let it rest for 5 minutes (see photo above!) while the potatoes and mushrooms finished.
As you can see, I also had a bit of avocado with it -- which happened to be at the perfect stage of ripeness (I am laughing as I type that because that is SO rare!!). Everything was delicious, and I have a lot left over for tomorrow -- maybe a steak sandwich or two?!
It’s clean out the fridge day at chez gentle. Lunch was eggplant parm and corned beef and cabbage, supper will be leftover chili.
