Dinner this evening was Vegan Enchilada Casserole, a salad and a glass of an oaky merlot wine. The casserole contents were, oven-roasted cauliflower, sweet potatoes, red onion, and a couple serrano peppers, also corn tortillas, enchilada sauce, spinach, black beans, cilantro and vegan cheddar cheese. Muy bueno!
Hump day and another bridge day at our house. Spoiled brat will go to lunch with our younger granddaughter and her kids while I have snacks here for the 8 players. This means easy and quick dinner: I have a frozen pizza that we will doctor up plus a small green salad: always a fun diner and easy clean up.
Came back from camping yesterday so just grilled a nice thick steak and baked potato.
It's going to be hot again today, and I find I lose my appetite in the heat, will throw a couple of those angus, brisket mix patties on the grill, with yellow squash and peas sauteed on the side. I loved coming home to fresh veggies ready to be picked!
