Had awesome leftover spaghetti with lots of herbs/garlic/oil and cheese for lunch. SO had a grilled chicken breast. Dinner at 8:00 or so will be beans with ham and corn muffins. The main cook is beat!

Dinner this evening was a Moroccan-style Eggplant Caponata Pasta. It was very good, but also very different. It was darn near Italian Caponata except for the addition of a za'atar blend, which is oregano, marjoram, cumin, coriander, sumac, and salt, which gave this dish a unique flavor. We certainly will have this again. Served with a simple salad and a glass of cabernet.

We will be enjoying some Chinese food: will do stir fry, egg rolls, pot stickers and some awesome snow peas I got at the farmers market. I had forgotten how good the freshly grown ones are.
