Bean burritos from the pintos with bacon I made on the weekend. I just reheat the beans and mash them up with the potato masher, no extra fat needed. Each burrito is topped with Tabasco, shredded cheddar, and raw onion before being rolled up.

Cdarocks, your party menu sounds delicious and a lot of work. I hope your guests appreciated your efforts!

I used Pam olive oil spray - the original recipe called for SIX TABLESPPONS of evoo. To the olive oil spray, I added I tsp. Evoo. (much less) and one Tsp. of Smart Balance.

I know, I hate margarine. I am even picky about butter. I like European butter. But it's his heart.

It tasted great! Seriously good. Cooked with two garlic cloves, tarragon, fresh parsley, basil, and a sprinkle of Hungarian smoked paprika.

They were crispy and sweet.

Since I had a late lunch (after 3:00 PM), I wasn't hungry for a full dinner, so I had a few apple slices.
