Last night I had diced boneless, skinless chicken thigh with my own concoction of a cherry-mustard sauce: a few fresh cherries, a bit of dijon mustard, a bit of thyme, and maybe an ounce of chicken broth to stretch the sauce (should have just processed more cherries instead, but it will still fine!).



It was quite good although I will use more cherries next time. The meal was relatively light on veggies as I didn't want to wait 45-50 minutes for the carrots to cook! But I did get lucky with an avocado (you never know ... ) and that was great with the chicken.

Our late lunch/early dinner on our vacation here in Reykjavik. https://loki.is/
My 16 year old had the smoked lamb flat bread with the other plate consisting of herring and eggs on rye, mashed fish on rye and rye bread ice cream.

My husband and eleven year old had the lamb shoulder.


And I had lamb soup with some just incredible freshly baked rye bread.

The adults had Viking to drink.

Nice, it's been 25-30 years, but I visited Iceland for a science conference in Reykjavik (the organizer, my friend, was born there), and then stayed on about another 5-6 days for sightseeing/hiking up north around Isafjordur. The food was very good there - fish and sheep/lamb were the big things - that's what the local environment is most suited for... they even had fish on their coins! The Icelandic women had eyes like jewels.

Ha! Ha! You made me pull the coins out of my pocket and check! They still have fish on them!
So far the food has been amazing. I bought some fish jerky today. They say you eat it buttered. I can not wait to try it!
