I browned the chops with some pepper, garlic powder, and a bit of onion salt, made some stuffing and put them on top of some stuffing that I made in a baking dish. Then I mixed cream of mushroom soup with some milk and a packet of onion soup mix and poured that over it. Yum. Funny thing is that none of my kids like chops, I am not a huge fan either, but they all stopped by (unplanned) and when they saw what I was having they said, "yuck, mom, why do you even make pork chops? Noone likes them, but I guess I will try some" and they really liked them! Ha. So, I guess this is a keeper dinner!
I can't seem to think of anything I want to make lately. Partly it is the beautiful weather, we are out and busy and I don't think of it until late. And I think with the seasons changing I feel like I need something fresh instead of the "same old".
I did make lemon chicken tonight and it was soooo good, but even though my freezer is full I can't find anything that looks interesting for tomorrow.
We're halfway through autumn here in Perth but received another blast of summer today. 32 Celsius, or 90 Fahrenheit! Had to put the aircon on for a while there. But it should cool down enough in a few hours for the pasta dinner I had planned. Just some good old spaghetti with meat sauce. Garlic bread (not store-bought), and Caesar Salad. I've pulled out the pasta machine from the back of the cupboard and will be making fresh spags this time, just for something different. It tastes nicer too.
Elston, let me know how your steak tips turned out, ok? Sounds like you're psyched.
Thanks for the suggestion on how to cook those sirloin tips......they were delicious. I thought that they needed long slow cooking and were to be served in a gravy over noodles or something like that.....braising. That would have worked but it would have been a bit like Dinty Moore.
As it was I didn't use the wine.....I did pretty much as you said....in my wok, I cooked up onion, red bell peppers (so pretty) garlic and shiitake mushrooms in a cold pressed virgin olive oil and butter...then removed them from the pan....added a bit more butter and oil and quick seared the meat and cooked a minute or two....and threw the vegetables back and served it over rice.*.....DELICIOUS-O!
* I just remembered that I did toss a splash of wasabi-ginger grilling/dipping sauce over the meat and veggies as I plated it.

Black bean chili was good last night may freeze the rest and havem't a clue about tonight. I have organic chicken thighs and a boneless pork roast. So probably either one of those w/sweet potatoes and asparagus.
