We had a roast chicken and mashed potatoes for dinner last night, so I took the rest of the chicken (a good half the bird), shredded it up, added rice, beans, and enchilada sauce, covered the top with cheese and green onions and we're having an enchilada-ish casserole tonight. Never tried it before..we'll see how it goes!

Did in the rest of my pasta salad and then went for a nice walk, beautiful day today. Now I'm sitting on the deck with a Gin & Tonic wondering whose life it is I've somehow mystically inhabited, and vowing to not give it back without a fight

I am cooking catfish fillets......I don't really like cat fish or at least I think I don't. I bought them by accident.....they looked so good in the fish counter that I must have convinced myself that they were young scrod fillets.....and those I do like, and know how to cook....when I got home I found I had $10 worth of catfish.......(not my DP's fav. either...but he said he is up for it.) I guess I will use a corn meal breading with some cajun spices and fry the suckers.

elston that sounds perfect for the catfish! it is a slightly stronger tasting swimmer and goes great with the combo you're doing - enjoy!

Oh Lacey.... my fingers are crossed and prayers are being said about the tornadoes and hail.... be careful....

I am signing off and going to sleep...on the sofa. HUBBY pulled through and picked up a sub on the way home....took Chatterbox to karate and is now standing gaurd to make sure she stays in her bed and does not pull her usual 30 trips downstairs. Diva and I are camped downstairs tonight.... again... but it easier with a sick kid than all of us cramped in my room. OK... gonna try and get some rest... GOOD NIGHT!

Had my hot dogs with some great slaw. I took a half pound of standard coleslaw and added Wasabi and yellow mustard and had that has my veggie. Over did the dogs by a minute. Sort of almost brittle Took a lot of ketchup on them. Didn't add any extra carbs with buns. Got plenty carbs at lunch.
