I decided on a lemon tart instead of raspberry tart for dessert
I figured the sweet/tart lemon would make the perfect compliment to the spicy scallops.
We grabbed quick mexican food tonite at Mama Margies....why is it when you are in a house and can cook you look forward to getting a night "off" by eating out...and when you are all wrapped up in a move and your kitchen is packed up you would kill to be able to make a home cooked meal???
Looking forward to getting my kitchen set up (FIRST room priority for us!) and cooking again.
That chicken feta sounds like a PERFECT first dish!
6 boneless chicken breasts
2T lemon juice divided
1/4 t salt
1/4 t pepper
1 1/2 C feta cheese
1/4 C chopped red pepper
1/4 C chopped fresh parsley
Preheat oven to 350
Arrange chicken in a 9x13-inch baking dish
Drizzle with 1T of the lemon juice
Season with the salt and pepper
Top with feta cheese and drizzle the remaining 1T. lemon juice
Bake for 35 to 40 minutes or until chicken is cooked through. Sprinkle with red pepper and parsley.
Makes 6 servings.
I cut this recipe in half as there is only the two of us here.

So excited Cyn shared the recipe I forgot to mention my dinner. Well, didn't cook, went to Marie Callendar's Half turkey sandwich, fries, salad and a pinot grigio
I didn't end up having zucchini. Woo hoo. I had a slice of rye bread lightly buttered with a piece of muenster cheese, fresh garden tomatoes, and some grapes. It was a nice light meal. I needed it after eating nomoresnow's zucchini and pineapple bread all day, which, BTW was very good.
Ramen with mixed veggies... Simmer a pot of water with the flavor packet that comes with the Ramen and then throw in the Ramen... and mixed veggies... good way to get rid of those left over bags of veggies... butter and parmesan cheese and fresh cracked pepper from a hand mill.....drain off about 95% of the liquid which has most of the salt from the flavor package.....Makes for a quick meal
