I like Granny Smith, too, but sometimes their skin can be too thick and tough.

I like crisp, slightly tart apples.

Braeburn, Jonathan, Jonagold, Jonamac, Empire, sometimes Granny Smith if I'm in the mood for more tart, are all good. Arkansas Black are beautiful, delicious, and hard to find commercially unless you go directly to an orchard that has them.

Red Delicious are a bland, mealy abomination. Terrible apples.

Granny Smiths are an old fashioned pie apple...they were used mostly for pies...and would be peeled...their skin wouldn't matter.
