I wish there was a larger variety of Chinese food in the USA for you all to try!
There's a huge variety of authentic restaurants from many different cities/provinces of China out in the San Gabriel Valley area, east of Los Angeles. It has the highest concentration of Chinese immigrants in the US. But the problem is that many of these restaurants cater to ppl who speak & read Chinese & some even have a second "English" menu with hong-kong cafe dishes to appeal to Western tastes. So unless you bring a Chinese friend or know exactly what dishes the particular restaurant specializes in, you could end-up with a perfectly bland forgettable meal.

Yeah, some areas do have good Chinese food. I think those restaurants with separate menus are doing themselves a disservice by not offering their best to all customers -- although I can see their perspective, as some people will end up ordering some strange plates, only to send them back.
My favorite Chinese restaurant in my town makes an awesome Beef Kow. I also love their Beef and Green Pepper in Black Bean Sauce. Yum! Now I'm hungry.....
Cashew Chicken.... after it has been sitting out on one of those buffets til it is glazed over. I don't know why but I really like the stuff that's been sitting out for a while better than fresh.
Sesame chicken or General chicken. It's hard to find places that make it the way I like it though. I don't like dark, stringy meat - I only want white chicken. I found 2 places and they have both since closed.
