Another of my tricks is to add a few carrots to my sauce to sweeten it up a bit...natural sugar.

Italian friend I grew up with....family always did a massive sauce batch at the end of the season..by massive, I'm talking about a 100 gallon cast iron kettle over a wood fire in the patriarch's back yard...just like it was done in the old country. They always added sugar at the end of the multiple day cook down...to combat the bitterness of the natural ingredients.

That’s kinda how we did apple butter, but again seeds and skins removed. Sugar at the end. But we have no sugar or other veggies in our tomato sauce. Just tomatoes and herbs. Maybe some garlic.

The sunrise sauce tomatoes are pretty sweet on their own.

Most people ad 1/2tsp of sugar to each qt anyways. Problem solved.

Then I guess I'm wrong. I really haven't actually been enjoying this sauce for so many years....I better go back to spending hours instead of minutes to prepare it.

Ha ha, one of the FEW advantages of apartment living. They've already taken my leaves away and during today's heat I finally dug the holes to plant some more daffodils. Had some of my tomato sauce last night and next year I will definitely cook it longer. It was kind of watery. But, oh you are so right about this wonderfully warm weather, especially today. Nearly 80F and muggy on Nov. 7th.

My husband's Sicilian Nona said that there couldn't be seeds in the sauce so you're obviously wrong.

I actually enjoy cleanup, its therapeutic for me. Especially knowing my pile of leaves goes from this...to that.
