There are several that tie that, (Texas has I-37 and I-35) and several that beat it with a difference of 1 digit. For example, both Indiana and Kentucky have I-64 and I-65. But Pennsylvania would top the list with the following 2 digit interstates in its border: I-78, I-79, I-80 and I-81.

2 is the greatest difference between two Mainline interstates in Vermont going the same direction by default its the least possible because odd go N/S evens go E/W.
And Alaska is the farthest East (technically not, but it crosses the International dateline, but they put a jog in it to keep it in the Western Hemisphere), West and North of all 50 states. HI is the farthest South.

Well, if that is the parameters and they must be going in the same direction, there are dozens of states besides Vermont with a difference of two besides my example in Texas. CA and AZ both have I-10 and I-8, LA has I-10 and I-12, MS and AL have I-20 and I-22, IL has two examples, I-55 and I-57 as well as I-70 and I-72 while Pennsylvania has I-76, I-78 and I-80 to go along with I- 81 and I-83 and I-84 and I-86, all even E/W mainline interstates. I don't think I exhausted the list.
There are no east-west interstates with numbers between 44 and 64, which meet in St. Louis. Numbers 50 and 60 were skipped. All numbers, odd and even, from 68 to 91 have been used. The longest unused gap is from 50 to 54.

Oh, I understand now, you are speaking of total interstates in the state. How about Delaware? Has I-95 and... well, I-95, a difference of 0. Okay, stretching that one a bit...
