I'm not blaming anyone in the least But as someone who's been in the food service industry for umpteen years, I can say right off the bat that if the price of product goes up, the owner or upper mgt may have no choice to up the prices on dishes using that product in order to offset whatever loss there may be.

Food, in general, is cheap in this country compared to other countries, so when prices go up, it's sticker shock, and of course people most affected by such are the ones who will loudly complain, at least in my experience.

There's also climate/health issues (no, I'm not debating here) associated with product. Avian flu wiped out a good deal of the country's poultry production these past two years. That's why your Thanksgiving turkey went up in price. Drought out in CA has affected a ton of produce we all take for granted. If resaturant owners cannot source the product, they can't produce. If they cannot produce, their business suffers :shrug:
