If you're going to be "all over NYC" meaning Manhattan, Brooklyn, Queens, SI, Bronx, then the last place you want to live is in NJ. Try looking for places in Queens and Brooklyn. If "all over NYC" means just Manhattan, parts of NJ could work for you. Look into Harrison. It's on the PATH. One seat ride to WTC, transfer at Journal Square for 33rd Street (Midtown)
Definately look into brooklyn. Theres a ton of apartments available, especially if you're willing to do a studio. Depending on your hours and what you need, you can even get by with no car, lots of supermarkets deliver these day.
If u need utilities included, then you might look into a nice basement apartment in a private house. many of them include utils, and you might even get free cable.
Of course with the housing glut going on here in nyc, many apartments are simply holes in the wall for 1200/mo. you really need to look around and find that gem. its not that hard.
fyi, if you go thru a realtor, be prepared with some $$$

1/mo rent to landlord
2/mo security. this is a relatively new thing, but everyone is looking for 2 months security, because in nyc it can take like 3-6 months to kick someone out of their apartment for not paying rent and stuff.

Try Cliffside Park in Bergen County (near the Fort Lee border). You should definitely be able to rent a one-bedroom in one of the older walkup buildings. It's a safe area, and the commute would be fairly simple.
You may be able to find a one bedroom apartment for 1,000 in Lyndhurst or North Arlington. From Lyndhurst you can take the train or bus to NYC, from North Arlington you can take the bus into NYC, and you can ride the North Arlington bus for 5 minutes to take you to the Lyndhurst Train Station. Either is about a 30-40 minute commute. Both towns are very safe.
