A good book, on a topic of mutual interest? If they travel, some kind of travel book? If they enjoy history or archaeology, go to the bookstore, and browse. If they're into art, an art book, maybe a catalog of a special art museum exhibit?
The tea/coffee idea gave me an idea; if they drink tea. maybe you could find a nice decorative teapot somewhere, like at an Asian grocery, or an Asian import store.
Museum gift shops are good sources of nice, unique gifts; you can go online to the New York Met, the Chicago Art Museum, the NYC Natural History Museum, etc.

someone once got me a hand-made gift certificate …..I loved it …..more of an official iou ….but it was a "summer cookout" (this certificate entitles you to a summer cookout at our place with your choice of seafood or steak and two adult beverages.... must give a weeks notice"
You didn't say what your budget was, but if you're trying to do a family gift, think of something they'd like that they could use as a family. Something like a jigsaw puzzle and some homemade spiced nuts. You could do a Netflix gift card and some good popcorn. You actually know these folks and what they'd like.

She knows them, and she knows what they like, but she has already said that they just go ahead and buy whatever they want. It is very difficult to buy gifts for people like that. You have to pretty much find something that they don't know exists. The presumption being: if they knew it existed and they don't have it already, then they don't want it.

Then maybe the OP has to assume that they don't need a gift from her. A heartfelt thank you note for helping her out might be enough.
I am at the point in life where I do not want any gifts. If I want something I buy it. I am annoyed by the idea of gift exchanges. It could be they want or need nothing.

I’m kind of there too. I tell my kids, if I can’t eat, burn it, or otherwise use it up, I dont need it. A nice bottle of wine or booze, or chocolates or coffee or tea, or fancy soaps, work for me.

Coffee, whole bean, recently roasted is okay. Whiskey is always welcomed, beer is good, unless it’s bud light.
