When we were kids in Milwaukee,Wi, we would go to the Borden Milk factory, in our neighborhood.. The nice folks there would give us free chocolate milk...
I have this same issue. My sister lives in Dubai, comes home for a fortnight at Christmas and buys gifts for all my grandkids as well as my daughters. So I really have to and want to get her something. But she has absolutely everything and food is difficult as she is not here long enough to eat it. Nor is she here often enough to use gift vouchers. Seems to get more difficult every year. But I try not to waste too much time on it as it is a courtesy gift and will more than likely never get used, regardless of what I buy.
An amaryllis bulb? I saw in our Trader Joe flyer that they are selling these really cool amaryllis bulbs dipped in red wax. You don't have to water them or anything. Just put them by a window with indirect light. I am thinking of going and buying a few for gifts. I think they were only around $10.
I really dislike having to figure out gifts. I just feel like I'm really bad at it. I have a friend who always finds the coolest things for me, but I feel clueless on what to buy her. We also have a big income difference.
I like having my friends' time more than anything else. I like the IOU idea mentioned above. Invite them over to eat?
How old is their child? An offer to babysit maybe? Take the child to an event or cool museum or something so they can have time alone?

I would get her a beautiful scarf, or wrap, or an unusual piece of hand crafted jewelry. Easy to pack, useful, and she will think of you when she wears it.
Make a donation in their names to a charity you know they would support.
This is a great idea. Someone did that for me once. Gave to the World Wildlife Fund particularly for elephant protection. I got a stuffed elephant and a certificate in the mail.
Food gifts are always good. I have a friend who grew up in a predominantly Jewish town in the NYC metro area. She now lives in the DC metro area and can't get real bagels, so one year I sent her a box from a NYC deli with bagels, lox, cream cheese, and half a dozen black-and-white cookies. She loved it.
