Oh yes, NC Trout is good stuff, but 80% of US Trout is raised in Idaho. Our corp chef made some NC Trout a few weeks ago and it was great. livermush... that looks like scrapple!!! Which is a PA Dutch sausage-like mixture of who-knows-what (but doesn't taste like liver).

My brother and I cleaned out my mom's cookbooks this past weekend and in a copy of "Mountain Makin's in the Smokies," I found this recipe:
Cornmeal Liver Mush
2 cups liver
3/4 cups fat
Cook liver well done. Have 1 1/2 cups stock. Take 3/4 cup cornmeal and parch cornmeal good and brown. Add stock and stir until good and thick. Then add liver and fat. Grind liver and fat. Add 1 teaspoon sage. Salt and pepper to taste.

Somebody fix it and give us a report! (No no, I won't do it!!!)
