Actually kerosene, compared to other rocket fuels, is pretty benign. You could throw a match in a bucket of it and the match would go out. It was commonly used in rockets during the Space Age 50+ years ago. The first stage of the monstrous Saturn V used it.
On the other hand, liquid oxygen will make almost anything burn violently.

I don't know why they gave the appearance that that launch was still possible up to 16 minutes before the scheduled time. With all that weather in the area, there was little to no chance of that launch today....and they knew that hours before, if not the day before.
We Mercury, Gemini, Apollo veterans saw what looked like a pretty amateurish performance today by comparison. But most of that may be due to today's media vs. the 60s legends - the REAL journalists we were accustomed to (and took for granted, not knowing what was coming) back then.
