There is no double standard. A nun's habit is not allowed, and neither is a hijab.

If it's visible, she'd be asked to remove it or hide it. If she refuses to, she can't teach in the classroom.

This is the same choice that was given to this teacher with a hijab. She was given a choice but refused.

I guess freedom of religion isn't a thing in Quebec?

She's actually been reassigned to other duties within the school. Just not in class with students.

Note that she has basically admitted that she is doing this on purpose (making a spectacle of herself and her case) in order to challenge the law.

The school board may actually be in on the cause célèbre as well.

If she wore a Don't Tread On Me cap, would there be the same outrage over forcing her to remove it?

There most definitely is, though there can be limitations on it just like there are everywhere.

These limitations may vary from one society or culture to another.

I was just reading an article over the weekend that was saying that 9 member countries in the EU have laws similar to or even stricter than Quebec's. And another half-dozen EU countries have similar laws in the works.

Switzerland (just outside the EU) also has some laws on religion that would make bien-pensant Americans and Anglo-Canadians scream with outrage.

There are even a number of Muslim countries believe it or not that restrict where and whn stuff like hijabs, burqas and other religious garb can be worn.

It's not covered by this specific law, but if you're a teacher you're not allowed to wear stuff with political slogans or obscenities either.

I just find it to be a slippery slope when government bans a person from wearing a religious garment or symbol. It seems like something that can be easily abused.

But I guess now that government is forcing people to wear face coverings and take vaccine injections, people don't really own their bodies anyway. All these fine details about 'rights' are interesting debates we had before Covid.
