Wanted to get some different ideas than what I usually make with them...most of time I roast them with olive oil and s/p.

You have any unusual ideas for the ubiquitous fresh green bean?

No canned soup concoctions please

Sautee fresh green beans in olive oil and add minced garlic in the last few minutes. If you don't have fresh garlic, granulated garlic works in a pinch.


Sautee fresh green beans and sprinkle with toasted sliced almonds just before serving. Add as much or as little of the almonds as you want.


Add sautéed mushrooms to sautéed fresh green beans.

Throw in some crumbled cooked bacon, works best with fresh beans. Or mix with cooked sliced mushrooms. Or both.

I blanch them and then sautée them in walnut oil and sometimes throw a few walnuts or pecans in for a little extra flavor.

One of my fav ways are what is described above

1 step I sometimes add before the sautéing in olive oil / garlic etc is ...

get a cast iron pan pretty hot with some bacon grease coating the bottom just slightly.
Char the green beans for a few minutes to scorch some of the exterior - I think the char gives them a nice taste.

Leave half in the cast iron skillet ( lower heat a lot so they cook slowly )

Place the other 1/2 of the charred ( half cooked ) beans you removed and sautee them in a separate dish adding the olive oil - garlic mushrooms etc ..

In the end put them back together and serve mixed together. the 2 diff tastes compliments one another

I have also incorporated thinly sliced green or red peppers in at various time intervals ( depends on if you want them snappy or soft )

also I have experimented adding in some roasted hot peppers that have been on the grill or under the broiler.
If not everyone is into hot peppers you can easily have a separate small skillet for them

another time I recall having a small block of some really hard parmesan cheese I grated over the beans as soon as they were put in the dish after cooking. Great taste as well as color contrast also

I like to stir-fry them with fresh garlic and ginger, toasted sesame oil, and slivered or sliced almonds. Serve with white rice and a meat, if you wish.

You can use just the portion of the recipe that's for the green beans, of course. But the whole meal is pretty easy and very good.
