replacement for cream of tartar (potatoes, cooking, crock, iced)

I am making a crockpot meal of potatoes and ham. The recipe calls for soaking the sliced potatoes in water and cream of tartar before preparing to keep them white when cooking. I will probably omit that step, as I don't want to buy a whole bottle of the cream of tartar for just this one recipe. Or is there something that I may already have in my cabinet that will do the same thing?
