Guys: If a girl you were seeing flat out asked you if you are just interested in her for sex, would you tell her the truth if you were? And what would you say?
I'm thinking that if the question has to be asked; she most likely already knows the answer.

Which is exactly how it should be. If you're not interested in a relationship or anything but sex, I think the polite thing to do is to lay it all out and if the other person decides to walk away then that's fine. Of course, I just assume every guy I date is only after a FWB situation until proven otherwise.
It's only a game until you meet someone who makes it not a game, and they are forthright with you, and treat you in a way you are not questioning, and you know they are serious.
But, it's a game with most guys you meet, because most guys like to think of themselves as nice guys who wouldn't ever have the audacity to hurt someone (not thinking that someone could easily be their sisters or mom).
Whenever I read how forumers are upset about how the booty call turned quasi bf relationship didn't work out and they get upset, I really respect guys more when they are open and honest and say "I'm not looking for a relationship right now but want a FWB". That's healthy boundary setting.
Maybe we as a whole should praise honesty more than "politeness" and fake.
But, it's a game with most guys you meet, because most guys like to think of themselves as nice guys who wouldn't ever have the audacity to hurt someone (not thinking that someone could easily be their sisters or mom).
I think you are right, most excuse themselves by thinking that showing other nice behavior such as texting to see how you are doing will excuse the fact they are just using you.
No never tell a girl that period. If she asks just deny it and tell her that you really care about her. If the relationship keeps leading to nowhere then maybe she will get the hint and move on.

If I'm not in the market for a relationship, or I'm not interested in her enough to committ but enough to sleep with her, I'll tell her right out the gate that I'm only looking for fun. Most usually respect the honesty and that I'm not being a player and tricking them into thinking I'm in love with them.
