Granny Smith apples make for a perfect Tarte Tatin. Even though Galas are the more traditional choice.

Just got back from dinner with friends who are quite the "pigs" like us (in a fun way). We had such a good time and laughed our *sses off. Some good wine and food.

Had to look it up, but I can see the appeal. I adore apple pie and apple cobbler, but find a lot of folks get sensitive about carmelizing both fruit and sugar, with the result that apples are often still a tad too crisp by the time the pastry is perfectly cooked. With some apples that's fine, with others -- not so much. I'm looking for either sweet or that beautiful balance between sweet and tart, NOT for sugar-coated tart.

Backyard cookout - that's what we've got going on Monday. Tomorrow is more shopping. Went out again tonight; got 8 bottles of men's body wash, paid $10 (mostly tax) and got back $16 to use on other stuff on sale this coming week. Then I got some charcoal, bogo, and hamburg meat on sale.

tomorrow is hotdogs for 50c a pound.

Plus the local radio show is having a top 500 countdown of GROUPS! some of my all-time favorites! Of course the Beatles are #1, but Elvis is right up there. Singing and bopping along in my car filled with bargains! HAhahaha.

That's why I prefer Granny Smith apples for this -- they retain a firm (but not crisp) texture, and the end result is both sweet and tart, whereas Gala apples tend to get mushy and too sweet. This is also the kind of apple pie that avoids the problem of the pastry being done before the apples, since the apples are caramelized first (although sometimes I do it after the baking).
