Well you can't be sure that's true. How about a referendum which would then tell us if there were such people or not? We wouldn't need to speculate then.

So where does the second guessing stop once it’s introduced into the democratic process by disgruntled voters?

Well now we've seen what a mess ad-hoc referendums can cause there should probably be some sort of procedure laid down for any future major constitutional changes by that method. Maybe a super-majority of 55-45 or 60-40 required, and if a proposal wins but doesn't reach that level of support then a confirmatory referendum a couple of years later to check the majority is still there.

Changing the rules in the middle of the game though because you don’t like the score seems unsportsmanlike.

If there is a choice between 'appearing unsportsmanlike' and 'wrecking the country' I'd rather choose the former as the least problematic, though obviously it would have been better if there was a properly thought out procedure for these things in the first place.

Hard Brexit parties certainly don't appear to be on a combined 50% or more in the polls, which is why a referendum is required.
