I find taking time to prep veggies is worth the hour or so when you come home from the store. When I had teens in my home, I always bought a large bag of baking potatoes, excellent stuffed with veggie chili.
One of our favorite meals - baked potatoes stuffed with chilli and many other things.
Sliced polenta, fried in a little olive oil to crisp up, over sauteed spinach and topped with jarred spaghetti sauce. You can make this in 15 minutes.
I also make this with eggplant cutlets (frozen, because I can't make cutlets from scratch to save my life) instead of polenta. I like using freshly sauteed spinach instead of pasta.
rice cooked with lentils and vegetables. a one pot meal
ingredients:
rice - 1 cup ( use any rice , best ones are long grained rice or jasmin rice)
red lentils or moong dal - 1 cup ( [url="http://nuts.com/cookingbaking/beans/red-lentils.html?utm_source=googlebase&gclid=CO-q5cXo3bACFQgJRQod1HJy0g"]
vegetables : any veggies of your choice ( potatoes ,eggplants, beans, carrots ,green peas, corn ,cabbage, califlower, brocoli) - 1.5 cups
ginger chopped 1 tsp
garlic chopped 1 tsp
chillies chopped 1 tsp
black pepper - 1/2 tsp
method :
wash and drain rice and red lentils
in big sauce pan add 1tsp of oil
add chopped garlic ,ginger , thai peppers ( 1 or 2) and whole black peppers
fry for a min
add all veggies ,rice ,lentil
pour 5 cups of water ,add salt.
cook this covered. I would prefer to cook this in a electric rice cooker or pressure cooker

you will see soft mushy texture with no water.
add some cream or butter while serving.
That sounds good. I think I'll try it and use cashew cream for serving, to make it vegan.

My children LOVE polenta and I prepare it in much the same way. They sell it inn those tubes so it's quite easy to make and to keep on hand.
My husband and I both love eggplant and when I lived near a Trader Joe's that was a staple in my freezer.
We don't have one here, unfortunately.
