Meatball hoagies on baguettes are so tasty and we have them about once week. Daiya cheese ant Nate's Italian style meat balls.

In the winter my wife males a meatloaf out of the awesome regular variety of Nate's meat balls. It's kind onf 50s diner style and it goes well with mashed potatoes, a fresh in season vegetable, or sweet potatoes.

Also works as a holiday roast. She's a really good cook.

Peanutbutter and strawberry preserves on wheat bread (you can get vegan wheat bread that isn't made with honey, you just have to check the ingredients).

No cooking time, 2 minute prep time, washup consists of 1 knife and throwing away a napkin. Lots of nutritional goodness and delicious taste all in one handsized treat!

I always keep plenty of Quorn "chicken" nuggets in my freezer. Unexpected guests stop by? I can put a couple dozen nuggets in the oven while I am preparing green and red bell pepper strips, olives, carrots, celery and a few different dips. I put all this out along with a some varieties of hummus and pita chips and make a nice snack spread in under 30 minutes.

Love Quorn chicken! All types. Gardien is also great and it's vegan.

My feel-good easy fast comfort food supper: saute garlic in olive oil, add red pepper flakes, toss in chickpeas, then toss with pasta. I usually go pretty heavy with the chickpeas. If I have leftover tomatoes or sauce around then sometimes I throw that in, too.

I love Gardien and Quorn! Unfortunately my regular grocer doesn't carry Quorn (I have to go to a separate grocery store for it) and the grocery store I used to go to an Hour Away from time to time USED to carry Gardien products but doesn't anymore. UGH so annoying!

Insty-kwik preparations, always on hand:

Box after box of Near East Original Pilaf (vegan), add water and cook on the stove. Ready in 20 minutes. Add a can of veggies of your choice and life is good.

Thai Kitchen noodle boxes. All are vegan. We find the others tasteless but put the serious munch on the peanut noodles and pad thai flavors. Add water and microwave.

Heat 'n' serve vegetarian baked beans. Buy generic or Bush's.

Canisters of brown and white rice. Fix with or without bouillon, and add steamed or stir-fried peas from the sack in the freezer. Matchsticked, stir-fried carrots with sesame seed are good too.

Keep a package of tortillas and a can of your choice of enchilada sauce. Spread the tortillas with fat-free refries (you can make 'em yourself by slinging a can of soup beans in the blender with a little of the liquid from the can). Roll it all up with some sauce, nuke 1 minute, and you have vegan burritos.

Pre-sliced bagels, to be opened, smeared on their open surfaces with tomato sauce, sprinkled with cheese or cheese substitute, and heated in the oven to make insty-kwik pizzas.

I also keep those black-bean chipotle burgers on hand but they are only for when I am half dead of hunger. They are VERY filling.
