I. Employee Health (+) Has Policy. Discussed employees do not work if feeling ill. Monitor employees for symptoms of illness such as vomiting, sneezing, coughing, diarrhea, etc.
II. Personnel Cleanliness (-) Observed employee drinking from an unacceptable beverage container while handling dishes. To prevent contamination of dishes and equipment, only closed beverage containers handled to prevent contamination of hands are acceptable. Open beverage containers may be stored in a designated location away from food, food preparation, or equipment, and hands must be washed after handling beverage. PIC discussed with employee during inspection.

OBSERVED EMPLOYEE HANDLE RAW EGG AND THEN READY-TO-EAT BACON WITH SAME GLOVES ON HANDS. PREVENT CROSS CONTAMINATION OF BACTERIA THAT MAY CAUSE FOODBORNE ILLNESS BY PROPER PRODUCT HANDLING AND GLOVE USE. CONTAMINATED FOODS DISCARDED DURING INSPECTION AND PIC DISCUSSED WITH COOK LINE EMPLOYEE. A FOLLOW-UP INSPECTION WILL BE CONDUCTED.

Follow-up inspection for Standard conducted on 11-05-12. Critical violation corrected: observed employee not cross contaminating between raw and ready-to-eat food. Managers have discussed with employees and monitor employee food handling.
