Please obtain additional freezer pans. You must have enough to cycle them in and out of the freezer often enough to keep the foods cold.
Sliced tomatoes are now considered a time temperature controlled for safety food. Tomatoes must be held at or below 41°F or using time in lieu of temperature (time in lieu of temperature requires a risk level 4 license).
A thermostat was noted with an exposed glass mercury switch. I recommend removing it if the thermostat is not functional. This could eliminate the risk of spilling mercury.
A complaint was received regarding a cockroach in a customers bag. No obvious signs were noted.
I recommend obtaining some monitoring stations (glue traps) and request the exterminator provide notes on any areas neecing improvement to prevent or reduce any issues.

A complaint was recieved that a customer went through the drive thru and received a fish sandwich with 2 bites taken from it.
Nothing was observed that could substantiate the complaint.

After investigating the complaint it was found no visible roaches in and around the Frappe machine discussed privately the PIC the nature of the complaint and together we investigated the Frappe machine and nothing visible was found inside, outside and around the machine.
The PIC furnished the last time the pest control was there in the facility which was Nov. 7, 2011.
