Proper Handling of Ready to Eat Foods Avoid bare-hand contact with ready-to-eat (RTE) foods to prevent contamination of PHFs. Observed a food employee touch cooked tortillas with her bare hands. Single-use gloves and utensils were available but were not used. Wash hands with soap and hot water for 20 seconds then wear single-use gloves or use tongs or deli tissue to prepare RTE foods. The food employee washed her hands and then wore gloves. The touched tortillas were voluntarily discarded.
Cross-contamination of Raw/cooked foods/Other Store all raw animal potentially hazardous foods (PHFs) below all pre-cooked and RTE foods to prevent cross-contamination. Observed 3 boxes of raw eggs stored above a box of ready-to-eat tortillas.
Toxic Items Properly Labeled/Stored/Used "Properly store all toxic, poisonous materials away from all foods and food contact surfaces of equipment and utensils to chemical contamination. Observed several bottles of motor oil stored above the ice scoop and ice bags on the shelving unit across from the ice machine. The motor oil bottles were moved to the bottom of the shelving unit."
