Inspection findings

Cold Hold (41 F/45F) All cold foods must be held at 41F or below at all times. Observed raw pork inside drink cooler with no ice at 71F for <4hrs
Hot Hold (135F) All hot foods must be held at 135F or above at all times. Observed cooked pork at 119F and beans at 113F for <4hrs
Proper/Adequate Handwashing Food employees must wash hands with soap & water immediately before donning gloves. Observed food employee put on a pair of gloves without first washing her hands.
Proper Handling of Ready to Eat Foods "Do not handle ready to eat foods with bare hands. Use a barrier such as gloves, tongs, wax paper or any approved method of handling to prevent cross-contamination; observed bare hand contact with tortillas."
Handwashing Facilities Adequate and Accessible Mobile unit must have minimum of 2-compartment sink and a separate hand washing facility (with separate faucet) with hot and cold running water under pressure for effective hand washing purposes. Observed no hand washing facility or apparatus on pushcart; observed food employee washing hands with water only contained in plastic water jug.
Handwashing Facilities With Soap and Towels Provide soap and paper towels to pushcart at all times for effective hand washing purposes.
Manager Demonstration of Knowledge/Certified Manager No Certified Food Manager on duty. A CFM is required to be on duty during all hours of operation.
"Approved Sewage/Wastewater Disposal System, Proper Disposal" Mobile units such as pushcarts are required to visit commissary at least 24 hours prior to each day's operation for proper disposal as required by law. Receipt must be kept on pushcart so that is it readily available for review upon inspection.
Food Establishment Permit Mobile food units such as push carts may not operate in Harris County without a current and/or valid mobile unit food permit. Push cart must be brought to HCPHES on Tuesdays 7:30a-11:30a for mobile unit permitting.
