At least 1 trained food manager is required to be on duty during all hours of food operations. There was no food manager on duty. There were 3 food manager certificates posted on the kitchen wall. One is food a person that no longer works here (it was taken down). The second is for a person who called in sick this morning. The third is for a person who is on medical leave. Another staff member was temporarily serving as a cook but she did not have a food manager certificate."
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized Keep all food contact surfaces clean at all times. Observed black sticky residue on the large can opener in the kitchen. It was cleaned.
