Approved Systems (HACCP Plans/Time as Public Health Control) Observed in one of the reach in cooler cooked eggs that were prepared on Sunday with out the proper date marking. Food that has been prepared and will be stored for longer than 24 hours should be labeled with the name of the product and the date that the product was made.
Manager Demonstration of Knowledge/Certified Manager Observed that there was not a certified food manager on duty during food preparation operation. A certified food manger should be on duty at all times during food operations.
