Inspection findings

Handwashing Facilities Adequate and Accessible Provide accessibility to all hand sinks. Observed kitchen hand sink is being used as a place to store large salad in. Person in Charge moved salad. Observed bar hand sink is being used to store oyster shucking board and tools on. That has been moved away from hand sink for the correction.
Handwashing Facilities With Soap and Towels Provide paper towels at the bar hand sink and at the men's rest room hand sink. Person in Charge provided paper towels.
No Evidence of Insect Contamination Clean up large amount of open garbage on the ground in the dumpster area. There is a large amount of open bags with seafood and other garbage on the ground. The flies are out of control at the dumpster due to the unsanitary conditions of the uncovered garbage and a poorly maintained dumpster area.
Manual/Mechanical Warewashing and Sanitizing Provide chlorine sanitizing solution for manual ware washing and hand towel storage at a concentration of 50-200PPM. Observed <10PPM in use. Cook corrected to 50PPM.
Manager Demonstration of Knowledge/Certified Manager Send at least 2 employees to an approved manager food safety class. A trained manager must be on duty during all hours of food operations. Rodolfo Ibarra was in charge until owner Karina Ibarra came in. She has a ServSafe Managers certification. Rodolfo could not correctly answer any food safety questions. Owner will have more people certified in food safety through classes.
Thermometers Provided/Accurate/Properly Calibrated (2C) Provide thermometers for 2 kitchen reach in coolers. Owner will purchase these.
Labeling Retain oyster shell stock tags for at least 90 days in chronological order. Observed very few oyster tags have been retained and they are not in chronological order. Owner will start keeping more accurate records.
