Cold Hold (41 F/45F) "Observed cooked rice, cooked beans, and fresh cheese being held on ice with internal temps between 49-52 F, and shell eggs held without temp control at all with 70 F temp. potentially hazardous items shall be maintained at 41F or below- eggs placed back into reach-in cooler. All other item placed were placed into ice with containers fully submerged to provide sufficient refrigeration"
Cross-contamination of Raw/cooked foods/Other "Observed raw shell eggs on shelf in reach in cooler above fresh produce and cooked foods. Also observed packaged raw chicken, raw beef, and cooked beans all stored on same shelf in cooler- store raw foods separate from ready-to-eat foods and each other- refer to storage chart already given to est. that is posted on wall next to coolers"
