Rapid Reheating (165F in 2 hrs.) Observed chicken holding at 128 F while holding in a hot holding cabinet which was observed at 170 F. Food shall be properly reheated to prevent food borne illnesses. The chicken was reheated in the oven to 165 F then packaged for sale.
