Hot Hold (135F) Commercially processed ready-to-eat foods for hot holding must be held reheated to and held at 135F; observed hot dogs on rolling warmer at 110F. Also observed sausage-on-a-stick in hot hold display case at 124F. PIC stated items had been out for about 2 hours. Thermostat on warmer and hot hold display case was adjusted for rapid reheating and proper hot holding.
