Approved Systems (HACCP Plans/Time as Public Health Control) Observed prepared cooked beef which was being held for longer than 24 hours with out the proper date marking. Food that is being held for longer than should be labeled with the name of the food and the date the food was made.
"Approved Sewage/Wastewater Disposal System, Proper Disposal" Observed that the mobile unit last commissary receipt was for 11/2012 and 10/12. Mobile unit should visit the commissary everyday as to ensure the proper maintenance of the mobile unit.
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized/Good Repair Observed that the microwave contained food build up. Observed news paper being used for food storage of cilantro. Food contact surfaces should be clean and free of build up.
