Cross-contamination of Raw/cooked foods/Other Observed raw chorizo and raw bacon over onions in reach in cooler. All produce items should be stored above raw animal protein items. Employee was given storage chart and rearranged reach in cooler.
Manual/Mechanical Warewashing and Sanitizing Observed buckets and sanitizing station of three compartment sink to be under 100 quaternary. Quaternary sanitizer should be between 150 and 400 PPM. Employees dumped buckets and drained sink and put proper sanitizing levels in buckets and sanitizing station.
Labeling "Observed bags of cookies for customer self service without proper labeling. All items that are for customer self service must have a label stating the common name or description of item, the ingredient list, a net weight, and where the item was packaged. Employee removed items from self service to behind the counter."
