      Observed cooked chicken and crab ragoon holding at 48*. Cooked Foods shall be held below 41* (or above 135*) If holding at room temperature, a time shall be visiblly marked on the container when the food is brought out of the cooler and cooked, food can be held for up to 4 hours- then discarded.
  • Food Source/Handling
    • Food Protection (Food stored in direct contact with water or ice 3-303.12, p 65)
    • Cross-Contamination Protection (Inadequate protection from cross-contamination 3-302.11, p 61)
      Observed raw chicken stored above vegetables.
  • Warewashing
    • Mechanical washing/sanitizing (Sanitization requirement/methods: hot water or chemical 4-702.11, 4-703.11, p 137)
      Chemical sanitizer in dishwasher is not working. Service was called at time of inspection.
  • Facility/Equipment Requirements
    • Food contact surfaces (Food contact surfaces not clean to sight or touch 4-601.11, p 129)
      Interior of ice machine is soiled and shall be cleaned. Ice scoop stored in ice bin shall be stored so the handle does not touch the ice.

    • Handling/storage/labeling of toxic items (Inadequate separation from food, equip, utensils, linens, single service 7-201.11, p 182)
      Observed chemical spray bottle stored above food containers. Corrected.
    • Inside physical facilities designed/maintained (Physical facilities not kept clean, cleaning done to minimize exposure to food 6-501.12, p 176)
      General cleanliness in kitchen. Walls and floors are heavily soiled especially under and around equipment and shelving.
