Observed cooked chicken and crab ragoon holding at 48*. Cooked Foods shall be held below 41* (or above 135*) If holding at room temperature, a time shall be visiblly marked on the container when the food is brought out of the cooler and cooked, food can be held for up to 4 hours- then discarded.

Interior of ice machine is soiled and shall be cleaned. Ice scoop stored in ice bin shall be stored so the handle does not touch the ice.

Observed chemical spray bottle stored above food containers. Corrected.

General cleanliness in kitchen. Walls and floors are heavily soiled especially under and around equipment and shelving.
