      Extensive cleaning is needed throughout the entire kitchen area. Also, the inside of the pepsi cooler needs cleaning.
    • Walls, floors, ceiling, lighting (Floors, walls, ceilings installed, are not easily cleanable 6-201.11, p 166)
      The floors in the kitchen area are rough and unfinished in some spots and should be repaired/replaced.

    • Handling/storage/labeling of toxic items (Restricted Use Pesticides, criteria not met 7-206.11, p 185)
      Mice poison being used as an extermination method in the kitchen area. Only use traps for extermination purposes.

      A large amount of cltter is present throughout the establishment and all items not used for the operation of this establisment must be removed. Also, it is not allowed to utilize a "knipco type" heater in a food establishment.

      There were several containers of ready to eat salads that were not datemarked. Employee COS.

    • Plumbing: installed/maintained (Plumbing maintained in good repair 5-205.15, p 153)
      Once toilet in establishment is flushed, the water in kitchen sinks (including dish and handwashing sinks) stops running. Eventually, water did turn back on but only a trickle of water came out. There needs to be water pressure and and adequate supply. The lack of water prevents proper hand and dishwashing. This needs to be repaired within 10 days. Contact this office when plumbing is fixed.

      Counter top in kitchen is covered with contact paper that is held in place with tape. Tape is not an approved source for food contact surface. Suggest sealing wood countertop to make easily cleanable. Top of chest freezer with smaller compartments has several holes in the top that have exposed rust. This also needs to be made easily cleanable or be replaced.

      Flooring is cracked and worn in several places. This needs to be replaced.

      There are several items here that are not used any more and must be removed. This includes older chest freezer in kitchen, old steam table, old ice machine, etc. If an item is not necessary for food service operation, it must be removed.

    • Equipment adequate to maintain temperature (Cold & hot holding equip, inadequate in number & design 4-301.11, p 117)
      Pepsi cooler used for storing food items is not able to maintain a temperature of 41 F or below at all times. Today the internal temperature was 47.6 F. The owner states that this unit goes through cycles. Monitor and document temperature. If this unit cannot maintain 41 F or below at all times, it must be removed from the establishment.

      This establishment needs to conduct a thorough cleaning of all surfaces in the kitchen. A follow up inspection will be conducted after 30 days in regards to all critical and non critical violations having to do with cleanliness. If these violations have not been addressed further action will be required by the Department.
