All salads, sandwiches, baked goods, etc., that are prepared onsite and packaged for resale must meet minimum labeling requirements that include the name and location of this establishment, the common name of food packaged, a full list of ingredients in descending order of predominance by weight, and the net contents (count, volumn or weight).
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observed a variety of salads, in addition to cut melons and deli meats that were not datemarked. Initiated correction onsite. Datemarking guidance left for reference. Also applies to deli sandwiches that are prepared and packaged onsite. The oldest potentially hazardous food that goes into the sandwich, salad, etc., must be used for the basis of seven-day datemarking.
