Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days Observation: There were several food items in the walk-in cooler that were outdated---Corrected-on-site. Food was disposed of during this inspection.
Foods are cooled using appropriate methods Observation: There was a large container of soup that had been cooling for about 40 minutes in the walk-in cooler--Corrected-on-site by instructing the manager to cool large batches with an appropriate method. The manager added a cooling wand to the soup and also pulled back the covering for the large shallow pan of casserole.
