    Observation: Several boxes of food are stored on the floor in the walk-in freezer.

    Observation: The salad dressing made on-site were not date marked.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: There were several food items in the walk-in cooler that were outdated---Corrected-on-site. Food was disposed of during this inspection.
  • Foods are cooled using appropriate methods
    Observation: There was a large container of soup that had been cooling for about 40 minutes in the walk-in cooler--Corrected-on-site by instructing the manager to cool large batches with an appropriate method. The manager added a cooling wand to the soup and also pulled back the covering for the large shallow pan of casserole.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: There is no small diameter probe thermometer for checking thin foods.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: The bottom of the salad prep cooler is about 44 F. The salad display case is borderline temperature.
  • Food on display is protected from contamination by consumers
    Observation: There are no sneeze guards for the pizza self-service buffet.
