3-501.13 Cease thawing potentially hazardous food at room temperature. Fish patties 52F, country fried steaks 58F thawed at room temperature, on the speed rack. Steaks, & fish paties were placed in the oven, at this time.
5-501.113 Keep dumpster closed. Both lids are open on dumpster (#2).
4-301.14 Provide ventilation hoods sufficient in number and capacity to prevent accumulation of grease or condensation on walls and ceiling. Steam is not contained underneath the hood when the door on the Boiler/Steamer is open.

The automatic dish machine is only used to wash the trays. All the Food Contact Surfaces, utensils, equipment, etc. is W-R-S in the warewashing sink.

5-202-12 Provide water at a temperature of at least 100 F through a mixing valve or combination faucet at handwashing sinks. Hot water not working at handwashing sink in dish machine room.
6-501.14 Clean ventilation hood. Vent hood in dish machine area has dusty build up around edge. Take measures to clean regularly.
