3-501.16 Maintain potentially hazardous food at 41 F or below. Chicken and tuna sala and Cheese on the make line were 42 - 45 F. Removed cheese and salad and retruned to the freezer to cool to 41 F. Cheese was not sliced and the cooled correctly. Salad was not cooled before placing on the serving line. Tuna and Chicken salad should be spread evenly 2 in thick in a pan. Do not use deep plastic container for cooling.
6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Clean the the floor under the fryer and behind the door in the dry storage area.
