3-501.16 Maintain potentially hazardous food at 135 F or above. 3-403.11 Use only equipment that will heat food to at least 165 F within 2 hours for reheating PHF in the warmers was 125F to 133 F. All PHF was removed from the warmers and reheated.
3-501.17 Properly date mark all potentially hazardous food prepared in-house when held for more than 24 hours. Tray of butts in the cooler were not dated. Tray discarded.
3-304.11 Prevent the contact of food with non-food contact surfaces, or, with food contact surfaces that are not properly cleaned and sanitized. Sheet pans and steam table pans were not clean and nested with clean.
6-301.14 Post sign at all handsinks that notifies employees to wash hands.
6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Ceiling and walls are heavily stained and liquid is running down the wall. 3-501.16 Maintain potentially hazardous food at 135 F or above. Butts in a holding unit were 50 F. Discarded 5 whole butts.
4-301.12 Provide a stopper for each sink compartment to immerse equipment and utensils for washing, rinsing, and sanitizing. Overflow drains drain was missing from 2 compartments --water onto the floor or sink drain was leaking.
3-304.14 Change the sanitizing solution for wiping cloths when visibly soiled.
4-901.11 Allow utensils to air dry before stacking.
6-501.12 Clean ceiling and/or wall vent covers. Heavy smoke and grease build-up on ceiling and walls. 6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Mold and mildew around the 3 compartment sink.
4-301.14 Provide ventilation hoods sufficient in number and capacity to prevent accumulation of grease or condensation on walls and ceiling. Ceiling and walls coated with condensation and grease.
6-403.11 Locate facilities for storage of aprons and personal belongings so that they do not contaminate food, equipment, or utensils. Aprons were scattered thorughout the facility.
